Christmas is coming and, for me, ‘tis the season of chocolate! Of course, Easter is another season of chocolate. And actually, now that I think about it, my birthday had me stuffing my face with chocolate for a month.
Okay, so I’m a chocolate fiend. Really, at any given moment I’m just looking for an excuse to indulge in the stuff. Bring on the holidays!
I’m spending Christmas this year with my bestie at her place, and I promised I would whip up some decadent chocolate mousse for dessert. Now normally, because I eat eggs these days, I would do this the more traditional way with egg whites. But it got me thinking, what if I was still vegan? What about the vegans out there? I know there are already a few tasty vegan chocolate mousse recipes around, but I wanted to have a go at creating my own and adding my own touch to it. Chocolate Mousse a là Faye!
So here you go, hope you enjoy it as much as I do. Just one small word of warning… it’s deceptively filling!
Vegan Chocolate Mousse
Ingredients
- 1 ripe avocado
- 1 small banana
- 1 can full coconut cream (chilled for at least 24 hours)
- 400 grams dark dairy-free chocolate
Instructions
- Place the flesh of the avocado, chunks of banana and coconut cream together into a blender. Make sure that the coconut cream has chilled in the fridge for at least 24 hours first (48 hours is better!) – and then, only scoop out the thick cream which has separated at the top.
- Blend all of these ingredients together until mixed thoroughly and completely smooth.
- Break up the dark chocolate into small pieces and melt slowly in a glass bowl over a saucepan.
- For those of you not familiar with this method: place a cm of water into a small saucepan and bring to a boil with a glass bowl on top, ensuring that the bottom of the bowl doesn’t touch the boiling water (there should be at least a cm space between). The steam from the water will gently heat the bottom of the bowl and slowly melt the chocolate without causing it to burn.
- Avoid tampering with the chocolate too much while it’s melting. Once it has fully melted and is completely smooth, take the bowl away from the heat and onto a bench/wooden chopping board.
- Pour the avocado/banana/coconut cream mixture into the melted chocolate and gently fold, until completely mixed through.
- Pour the mixture into your choice of serving bowls/cups and allow to chill in the fridge for at least an hour.
- Top with your choice of fresh berries and some grated leftover chocolate, and ENJOY!
